First off, it is SO nice to be back with you all after taking a hiatus to spend some time with our baby girl, Grace Eloise. I will say, though, having more time at home and a decreased desire to “run to the store” (leaving the house with a newborn is serious business) has certainly reinvigorated my kitchen creativity. Out of that came many new recipes including this easy, inexpensive chicken fried rice.
I had a hankering for chicken fried rice one night, but didn’t feel like paying for delivery nor spending the time and effort going to the store with a new babe. So I sat Grace in her Bumbo chair in the kitchen (see pic below), inventoried what we already had and successfully created this yummy recipe. A mom win if I may say so myself.
This chicken fried rice recipe is also gluten free and dairy free.

Recipe
- Serves: 4-6
- Total time: 30-45 minutes
Ingredients
- 1.5 pounds chicken breast, chopped
- 1.5 cups rice, dry
- 3 cups chicken broth
- 1/4 cup coconut aminos (or soy sauce)
- 1/4 cup siracha
- 4.5 cups coleslaw mix
- 2 heads broccoli (about 3-4 cups, chopped)
- 1 onion, chopped
- 2 Tbsp olive or avocado oil
- 2 Tbsp sesame oil
- 1/2 tsp salt, or more to taste
- 1/8 tsp chili powder
- 1/8 tsp cayenne red pepper (optional)
- Green onion for garnish
Directions
- Cook rice in chicken broth instead of water.
- In a small bowl, mix coconut aminos, siracha, salt, cayenne and chili powder and set aside.
- Pour olive or avocado oil in large skillet or wok. Heat on medium-high and add chicken breast.
- Once chicken is about halfway cooked, add chopped onion and continue to cook until chicken is cooked through.
- Once chicken is cooked through, add broccoli and stir, cook for about a minute.
- Add coleslaw mix, cook for another 3-4 minutes until broccoli is becoming tender.
- Add coconut/siracha mixture and cook another 2-3 minutes, until broccoli is tender.
- With heat still on medium-high, add cooked rice and toss to stir.
- Drizzle sesame oil over rice and stir. Continue tossing so the bottom does not burn.
- Remove from heat.
- Serve hot and garnish with green onoins.
- Enjoy!
Tips & Tricks
- Green onions aren’t just for garnish, but add a huge boost to the dish, bringing all the right flavors together.
- If you don’t keep sesame oil on hand, buy it because it adds SO much flavor to certain dishes, this one included. It’s also a healthy oil.
- Use as much cayenne as you like depending on heat preference.
- Leftovers are yummy!
