best sauteed spinach

You know how when you go to a good restaurant and they have the best sautéed spinach, then you make spinach at home and it tastes way too green and flavorless?

Well y’all, I was determined to find an enjoyable way to eat this superfood at home and after some time I am claiming success! My husband loves it too. And the best part is that it is surprisingly easy with only a few ingredients.

When I can’t think of a veggie side I lean on this sautéed spinach recipe. After you try it I bet it becomes your go-to for a healthy, green, but also yummy side dish too.

Recipe

Serves: 2-4

Time: 20 minutes total

Ingredients

  • 10oz fresh spinach
  • 1/2 of an onion, sliced into 1 inch slivers
  • 1/4 cup olive oil
  • 1 heaping Tbsp minced garlic
  • 3/4 tsp salt
  • 1/8 tsp cayenne red pepper (optional)
  • chicken broth as needed

Directions

  1. Wash spinach and set aside.
  2. Pour olive oil into medium sized pot, turn on heat to medium.
  3. Add onion. Allow to heat and onions to sauté, until fragrant and beginning to become translucent but not to translucency (see pic above).
  4. Add minced garlic and sauté another 1 minute.
  5. Add spinach. It will seem like a lot but spinach cooks WAY down.
  6. Add salt and pepper.
  7. Continue cooking uncovered for 10-12 minutes, stirring frequently.
  8. If the pot starts to get dry and spinach sticks to the bottom, add chicken broth 1/4 cup at a time until not sticking anymore. This may not happen, sometimes it gets dry as I’m cooking and other times it doesn’t, unfortunately I have no answers to explain this. Just be sure to moisten with chicken broth and not water for increased flavor.
  9. Enjoy!

Tips & Tricks

  • As mentioned above, if you have to add something to moisten the spinach add chicken broth 1/4 cup at a time. Adding water will dull the flavor. If vegetarian or vegan, use vegetable broth instead of chicken broth as needed.
  • Spinach cooks wwaaayyyyy down… be sure you start with enough spinach to yield however many servings you want.
